Acorn & Apple Soup for the 1-2 Punch

Here in the PNW the rain started, the temperature dropped and although fall is gorgeous, we are starting to get sore throats and feel the first cold of the season coming on and need us some vitamin C!

This acorn & apple soup is so easy to assemble and make and will be building up the immune system lickety-split. (All puns intended!)


  • acorn squash
  • small apple
  • 1 yellow onion
  • 1 clove of garlic
  • 2T olive oil
  • dash of cinnamon
  • dash of thyme
  • 1C coconut milk
  • salt & pepper to taste

Here comes the easy part! Slice the squash and place on your silpat or parchment paper. Add apple slices, onion, garlic, olive oil, cinnamon, thyme to the scooped out center of the squash and pop into a 425 degree oven for 50-60 min until browned. Spoon out the roasted yumminess into your blender and add coconut milk (can also use bone broth) and mix. Serve nice and warm and get that immune system singing!
